Green Lentil Soup with Orzo Pasta

Serves 8 people

Ingredients

  • Oil or butter for the pan
  • 1 medium onion, chopped
  • 1 Tbsp red pepper paste, sweet
  • 1 Tbsp red pepper paste, spicy
  • 1 tomato or 1 Tbsp tomato paste
  • 1 tablet beef bouillon
  • 2 cups green lentils, cleaned and washed
  • 3/4 cup orzo pasta (or eriste)

Directions

  1. Melt oil in the pot and saute the chopped onions.

  2. Add the pepper paste and tomatoes and fry until well blended. You may need to add a little water. Add the beef bouillon and simmer for a minute or two.

  3. Add the lentils and orzo pasta and cover with boiling water from a kettle.

  4. Cook in a pressure cooker for 15 minutes. Uncover and add spices (salt, black and red pepper) to taste.
