Ingredients
- 4 tablespoons butter
- 1 1/2 cup diced onion
- 4 cups diced potatoes
- 1/2 carrot
- 2 cups water
- 1 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried dill weed
- 3 cups milk
- 2 tablespoons fresh parsley
- 1/4 cup instant potato flakes
Directions

In a large saucepan, melt the butter

Saute the onion until brown

Add the potatoes, carrot, water, salt, pepper and dill

Bring to a boil, reduce heat and simmer for about 30 minutes

Stir in the milk and parsley, and stir just until hot, not boiling

Stir in the potato flakes the last few minutes of cooking
