Chile Verde Con Pollo

Green Chile Chicken Stew

Ingredients

  • 2 to 3 pound chicken, or chicken parts, I use 3 thighs and 2 boneless breasts
  • 1/2 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 2 cups green chile, peeled and chopped (I have used 2 small cans of green chile
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 6 cups chicken broth
  • 1 can diced tomatoes,do not drain
  • 3 large baking potatoes, peeled and cubed

Directions

  1. Turn oven to 375, place aluminum foil on baking sheet. Place chicken on pan and bake for about 45 minutes. Let cool until easy to handle and dice meat. Season with salt and pepper to taste.

  2. Meanwhile in a large pot brown union in butter. Add flour and stir until golden brown. Whisk in stock, add remaining ingredients and simmer until potatoes are tender 20-30 minutes
