Coconut Custard Pie

Ingredients

  • 1 1/2 c sugar
  • 2 eggs
  • 1/2 tsp. salt
  • 1/2 c buttered, softened
  • 1/4 c flour
  • 1/2 c milk
  • 1 1/2 c coconut
  • 9" unbaked pie shell

Directions

  1. Beat sugar, eggs and salt until lemon colored. Add butter and flour.

  2. Blend well.

  3. Add milk and 1 cup coconut. Mix well.

  4. Pour into pie shell.

  5. Top with remaining coconut.

  6. Bake at 325 about 1 hour.

  7. Pie is done when knife inserted in center is clean when removed.
