Black Bean Hummus

Ingredients
- 1 1/2 cups cooked black beans (cooked from dry or canned, drained)
- 1/3 cup tahini
- 1/4 cup fresh lime juice
- 3 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1/4 cup thinly sliced scallion (white and green parts)
- 1/4 teaspoon ground cumin
Directions

Add the beans, tahini, lime juice, olive oil, and garlic to a food processor fitted with a steel blade.

Cover and process until pureed.

Add in the scallions and cumin; cover and process until just combined.

Variation—add1/4 cup chopped fresh cilantro and Tabasco sauce to taste.
