Serves 5 peopleIngredients
- 1 cup plus 2 tbsp. skim milk, divided
- 2 tbsp. (half a 4-serving package) sugar-free fat-free chocolate instant pudding mix
- 1 cup Cool Whip Free, thawed
- 4 Vitalicious VitaTops (Deep Chocolate, Double Chocolate Dream, or Triple Chocolate Chunk), thawed
- 1/4 cup light or fat-free caramel dip (like the kinds by Marzetti)
- 2 tbsp. chopped pecans
- 2 tbsp. shredded sweetened coconut
Directions
-
In a mixing bowl, combine 1 cup skim milk with pudding mix. Whisk until thoroughly blended and thickened, about 2 minutes. Refrigerate for 5 minutes.
-
Gently fold in the Cool Whip, until completely combined. Refrigerate for at least another 5 minutes.
-
Break VitaTops into pieces and place in a blender. Pulse until reduced to crumbs. Set aside.
-
Combine caramel dip with remaining 2 tbsp. skim milk in a small microwave-safe bowl. Microwave for about 45 seconds, until softened. Mix well. Stir in pecans and coconut, and set aside.
-
Lay about one-third of the Vita crumbs along the bottom of a medium serving dish/bowl. Top evenly with half of the pudding/Cool Whip mixture.
-
Drizzle half of the caramel mixture over the pudding/Cool Whip layer, and then sprinkle about half of the remaining Vita crumbs into the dish/bowl.
-
Spread the remaining pudding/Cool Whip mixture over the Vita layer. Finally, top with the remaining Vita crumbs, and drizzle or top with the remaining caramel mixture.
-
Serve with 5 spoons! (Or just dole out a serving and refrigerate the rest!)
