Cranberry Nut Bread

Yield is one 9×5″ loaf pan or four “baby” loaf pans (5 3/4″ × 3 1/2″ × 2″)

Ingredients

  • Mazola Pure Cooking Spray
  • 2 cup flour all-purpose
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 Tbsp shortening
  • water, boiling
  • 1 egg, beaten
  • 1 cup cranberries, raw, halved
  • 1 cup nut meats, broken
  • 1 orange, grated rind

Directions

  1. Spray pans with cooking spray

  2. Sift flour, sugar, baking powder, soda and salt together.

  3. Combine juice of orange, rind and shortening with enough boiling water to make 3/4 cup liquid.

  4. Add the liquid and the beaten egg to the dry ingredients and blend until dry ingredients are moistened.

  5. Add cranberries and nuts, mix.

  6. Pour into loaf pan (one 9×5″ or four baby).

  7. Bake at 350 degrees or until center is cooked. (Test with toothpick or skewer.)
