Cranberry Nut Bread

Yield is one 9×5″ loaf pan or four “baby” loaf pans (5 3/4″ × 3 1/2″ × 2″)

Ingredients
- Mazola Pure Cooking Spray
- 2 cup flour all-purpose
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 Tbsp shortening
- water, boiling
- 1 egg, beaten
- 1 cup cranberries, raw, halved
- 1 cup nut meats, broken
- 1 orange, grated rind

Spray pans with cooking spray

Sift flour, sugar, baking powder, soda and salt together.

Combine juice of orange, rind and shortening with enough boiling water to make 3/4 cup liquid.

Add the liquid and the beaten egg to the dry ingredients and blend until dry ingredients are moistened.

Add cranberries and nuts, mix.

Pour into loaf pan (one 9×5″ or four baby).

Bake at 350 degrees or until center is cooked. (Test with toothpick or skewer.)
