Bob’s Spicy Chinese Noodles

Peter Pan brand creamy peanut butter is preferred.
Noodles and sauce can be made a day ahead and don’t have to be refrigerated.
Don’t toss them together until ready to serve.
Dish is best served at room temperature.

Ingredients
- 2 - packages of fresh linguini (9 oz. each)
- 2 Tbs. canola oil
- Sauce:
- 6 cloves of garlic, peeled and crushed
- 2 Tbs. chopped or grated fresh ginger
- 6 Tbs. peanut butter
- 1 tsp. chili oil
- 1/2 cup soy sauce
- 4 Tbs. sesame oil
- 11/2 Tbs. chili paste with garlic
- 4 tsp. sugar
- Garnish: 8 scallions, thinly sliced on the bias
Directions

Cook noodles according to package directions, drain, then put them in cold water to stop the cooking.

Drain the noodles well and then toss with canola oil to keep from sticking.

Mix the sauce ingredients together and add extra sesame oil for consistency, if necessary.

When ready to serve, toss the sauce with the noodles.

Sprinkle on portion of the scallions and serve.

Extra scallions can be put in a side dish to add to noodles later.
