Broiled Zucchini Toasts

Ingredients

  • 2 cups unpeeled grated zucchini
  • salt
  • 1/2 cup mayonnaise
  • 1/2 cup plain nonfat yogurt
  • 1/4 cup grated parmesan cheese
  • 4 green onions, thinly sliced (include some tender green tops)
  • 2 garlic cloves, minced
  • 1 teaspoon Worcestershire sauce
  • Tabasco sauce, to taste
  • 20 -24 slices baguette

Directions

  1. In a mixing bowl, sprinkle shredded zucchini with salt and let stand 1 hour.

  2. Drain and rinse well; blot dry with paper towels.

  3. Return zucchini to the mixing bowl and add in the next 7 ingredients; stir to combine.

  4. Place baguette slices on a baking sheet.

  5. Spread about 1 tablespoon zucchini mixture on each slice.

  6. Bake in a 375° oven for about 10-12 minutes or until mixture is bubbly.

  7. Serve immediately.
