Japanese Cucumber and Carrots

Serves 8 people

Ingredients

  • 1/4 c vinegar
  • 1/4 c sugar
  • 1/2 t salt
  • 1/4 t msg
  • 1 carrot
  • 1 cucumber

Directions

  1. Make sauce by mixing the vinegar, sugar, salt and msg together until sugar is disolved. Peel the carrot and slice diagonally. mix carrot and cucumber (after cucumber has ben peeled, seeds scooped out and sliced diagonally) slices in a bowl and sprinkle with salt. Let stand 20 minutes. Wash salt off vegetables and drain. Pour over vegetables. Stand 30 minutes. Garnish with chopped green onions
