Ingredients
- 3 cups diced cooked chicken
- 1 celery, finely chopped
- 1/2 red bell pepper, finely chopped
- 4 green onions, including some tender green tops, finely chopped
- 1/2 cup mayonnaise, plus extra for spreading on the bread
- 1/4 teaspoon salt
- fresh ground black pepper
- 8 slices pumpernickel bread (or other brown bread)
Directions

In a bowl, mix together all the ingredients except the bread; taste and adjust with salt and pepper.

*Optional—spread mayonnaise on all of the bread (I don’t do this b/c I don’t like a lot of mayo).

Divide mixture evenly between 4 slices; top with the remaining bread. 4 Eat whole or cut in half and serve.
