Beefy Greek Pita Folds

Ingredients

  • 1 lb ground beef
  • 1 small onion, cut in half lengthwise, sliced
  • 3 cloves garlic, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 sliced ripe olives
  • 1/2 cup finely copped peeled cucumber
  • 1/2 cup chopped seeded tomato
  • 1 container (8 oz) low-fat plain yogurt (1 cup)
  • 1 tsp dried dill weed
  • 4 soft Greek-style pita breads, heated

Directions

  1. In 10-inch skillet, cook ground beef, onion, garlic, oregano, and 1/4 tsp of salt over medium-high heat 5 to 7 minutes, stirring frequently, utnil beef is thoroughly cooked. Drain. Stir in olives.

  2. Meanwhile, in medium bowl, stir together cucumber, tomato, yogurt, dill and remaining 1/4 tsp salt.

  3. Spoon 1/4 of beef mixture on half of each pita. Top each with yogurt mixture; fold other half of pita over filing. Serve with remaining yogurt mixture.
