Ingredients
- 1 1/4 cups vanilla wafer crumbs
- 4 tablespoons melted butter
- 3 packages Equal
- 1 package cream cheese softened
- 2 eggs
- 2 egg whites
- 2 tablespoons corn starch
- 1 cup sour cream
- 1 teaspoon vanilla
Directions

Mix vanilla wafer crumbs, butter and 1 package Equal and press into bottom and 1/2" up a spring form pan

Reserve 1 tablespoon of crumb mixture

Bake in preheated 350 oven until lightly brown

(about 8 minutes)

Allow to cool on wire rack

Beat cream cheese and remaining Equal in large bowl until fluffy

Beat in the eggs, egg whites and corn starch

Mix in sour cream and vanilla and beat until well blended

Pour into crust

Place cheese cake in roasting pan in oven rack and add 1" water to the roasting pan

Bake at 300 until center is just about set (about 1 hour)

Remove cheesecake from roasting pan, sprinkle with reserved crumbs and return to oven

Cool in oven for about 3 hours with door ajar
