Shrimp Creole

Ingredients
- 14 oz canned diced tomatoes
- 1 tbsp Ketchup
- 1 tsp chili powder (more if you'd like some kick to it)
- 2 tsp brown sugar
- pinch of salt
- 1/8 tsp cayenne
- 1/2 green pepper, chopped
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1/3 cup celery, sliced
- 1/2 cup onion, sliced
- cooking oil
- 1 lb cooked peeled shrimp
- Rice
Directions

Mix tomatoes, ketchup, seasonings and set aside

Heat oil in 12-inch skillet

Stir fry peppers, celery & onions 3 minutes.

Add tomato mixture

Add shrimp and heat through

Let simmer a couple of minutes. (Do not overcook shrimp!)

Serve over rice
