avocado, cashew, tomato, & cucumber salad

Serves 3 people

Ingredients

  • 2 large cucumbers
  • 8 cocktail tomatoes (or any variety)
  • 1/2 cup cashews soaked overnight in water in the fridge
  • 2 small avocados
  • 3-4 basil leaves, finely chopped
  • better than bottled balsamic vinaigrette
  • freshly ground black pepper
  • sea salt, to taste

Directions

  1. Mix the dressing in a small bowl and set aside.

  2. Chop all veggies and toss everything into a bowl except for the avocado.

  3. Add dressing and mix well.

  4. Top with avocado last.
