Ingredients
- 3 tbsp olive oil
- 4 large russet potatoes, peeled and cut in uniform 1 inch cubes
- 2 tbsp minced onion
- 2 cloves garlic
- salt and pepper
- 1-1/2 tbsp spanish smoked paprika
- 1/4 tsp Tabasco sauve
- 1/4 tsp ground thyme
- 1/2 cup Ketchup
- 1/2 Mayonnaise
- chopped parsley to garnish
- Oil for frying
Directions

Heat olive oil and saute onion and garlic until soft. Off the heat add paprika, tabasco and thyme. Transfer to a bowl and add ketchup and mayonnaise. Season with salt and pepper to taste.

Sprinkle the potatoes lightly with salt and pepper. In a large skillet fry the potatoes until cooked through and golden brown, stirring occasionally. Drain on paper towels, add more salt if necessary and serve with spicy tomato sauce on the side. Spoon a little over the top and sprinkle with a little chopped parsley.
