Whole Grain Pancakes

Ingredients

  • 1/3 cup whole wheat flour
  • 1/3 cup all purpose flour
  • 1/3 cup regular rolled oats
  • 2 T oat bran
  • 2 T flax meal
  • 2 T sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 2 T oil
  • 1 cup buttermilk
  • 2 T water (more or less)

Directions

  1. butter or spray skillet

  2. mix dry ingredients in a bowl

  3. mix first three wet ingredients (skip water for now) in a different bowl

  4. heat skillet to medium

  5. add dry ingredients into the wet bowl and mix just until barely blended

  6. add around 2 T of water if needed

  7. oil pan with real butter so outside of pancake will absorb the taste

  8. spoon batter onto skillet cook for 3-5 min

  9. flip and cook for another couple min

  10. serve with all your favorite toppings
