Chinese Chicken Salad

Ingredients

  • 1/4 cup rice wine vinegar
  • 3 T peanut oil
  • 2 T toasted sesame oil
  • 1 1/2 T honey
  • 2 tsp dry mustard
  • 1 tsp soy sauce
  • 1/2 tsp salt
  • 1 whole chicken breast
  • 5-7 large Napa Cabbage Shredded
  • 1 red bell pepper slice 1" strips
  • 4 scallions, thinely slice
  • 1 T chopped cilantro
  • 3 head Boston Lettuce

Directions

  1. blend- vinegar, both oils, honey, mustard, soy sauce, and salt

  2. place chicken in pot of cold water, bring to a boil, turn down heat, cover and let stand ten min.
