Cilantro Carrot Soup

Ingredients

  • 6 large carrots
  • 4 cups water
  • 1/2 cup grated onion
  • 4 T butter
  • 3T flour
  • 3 cups chicken stock
  • 2 cups light cream
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 1/8 pinch cayenne
  • 2 T cilantro

Directions

  1. pare and chop the carrots

  2. boil teh carrots int eh water until tender

  3. drain and puree the carrots in food processor

  4. saute teh onion in the butter, sprikle with flour, and cook for two mintues over low heat

  5. add the chicken stock , cream, and carrot puree

  6. simmer for three minutes

  7. sitre in the seasonings

  8. simmer for five minutes longer

  9. sprinkle with cilatnro and serve
