Bruchetta Roma

Ingredients

  • 1 loaf french baquette
  • 5 T olive oil, divided
  • 4 large Roma tomatoes, diced
  • 1/2 cup asiago cheese or feta cheese
  • 1/2 cup minced basil or cilantro
  • 1 tsp sugar
  • 1 T lemon juice
  • 2 stalks green onion, chopped
  • 1/2 tsp each salt and pepper

Directions

  1. cut bread diagonally into 3/4 in slice using 3 T olive oil, brush both sides of bread

  2. toast at 350 for 5 min per side or until golden brown

  3. in a med bowl mix all ingred, spoon over toasted bread and serve

  4. if not serving immed. refrigerate and bring to room temp before serving

  5. makes eight to ten servings
