Italian White Bean Soup

Ingredients

  • 1 T EVOO
  • 1 med onion, chopped
  • 1 cup celery, chopped
  • 1 clove garlic
  • 2 16 oz cans great northern beans, drained
  • 3 1/2 cups water
  • 2 T chicken seasoning
  • 1/4 t thyme
  • 4 cups fresh spinach, chopped
  • 3/4 t vege-sal

Directions

  1. Saute onion, celery & garlic in evoo.

  2. Add rest of ingredients and simmer 20 min.

  3. remove from heat.

  4. blend 2 cups soup and add again.
