Almond Crusted Shrimp

Ingredients

  • 12 large shrimp, shelled and deveined
  • 1/3 cup cornstarch
  • 3 egg whites, beaten until frothy
  • 1 cup sliced almonds
  • Olive oil
  • Dipping sauce:
  • 1/2 cup apricot preserves
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar

Directions

  1. Preheat oven to 400

  2. Dredge Shrimp in cornstarch, then egg whites, then almonds

  3. Place on oiled pan

  4. spray shrimp w/ olive oil.

  5. Bake 10 minutes or until crusty and brown
