Almond Crusted Shrimp

Ingredients
- 12 large shrimp, shelled and deveined
- 1/3 cup cornstarch
- 3 egg whites, beaten until frothy
- 1 cup sliced almonds
- Olive oil
- Dipping sauce:
- 1/2 cup apricot preserves
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar

Preheat oven to 400

Dredge Shrimp in cornstarch, then egg whites, then almonds

Place on oiled pan

spray shrimp w/ olive oil.

Bake 10 minutes or until crusty and brown
