Spring rolls in thai dipping sauce

Ingredients
- 6 spring roll wrappers
- 12 medium shrimp, cooked and peeled
- 1 cup lettuce, shredded
- 1/3 cup cilantro
- 1/2 cup cucumber, peeled and seeded
- 1 carrot, julienned
- Dipping Sauce:
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 3 tablespoons mirin or rice wine
- 1/4 teaspoon ginger (optional)

soak a wrapper until limp

lay out flat

add 1/6 of ingredients down the middle with lettuce first

fold over each end, then roll like a burrito
