Beets with Orange and Ginger

Serves 6 people

Ingredients

  • 6 beets
  • 1 tbsp cornstarch
  • 1 cup OJ
  • 1 tbsp white vinegar
  • 2 tbsp maple syrup
  • 1 tbsp ginger, crystallized and chopped
  • 1/2 cup walnut pieces

Directions

  1. Scrub Beets, leaving on root and 1 in of stem.

  2. Place in large pot covered with water.

  3. Bring to boil, cover and simmer for 45 to 60 minutes or until tender.

  4. Drain, peel skins, cut into wedges.

  5. In saucepan, combine cornstarch, OJ, maple syrup, vinegar, ginger and walnuts.

  6. Bring to boil and simmer until thickened.

  7. Add beets and toss to coat.
