Ingredients
- 4 sweet potatoes
- 1/2 cup Orange marmalade or apricot
- 1/2 cup OJ
- 2 tsp almond extract
- 3 egg whites
- 2 tbsp almond slivers, toasted lightly
Directions

Cook sweet potatoes until tender (15-20 min in micro or 1 hour in 450 oven or boiled 25 minutes)

Let cool.

eheat to 350.

Peel sweet potatoes, mash.

Add marmalade, sugar, OJ and almond extract; beat until smooth.

Separate bowl, beat egg whites til stiff peaks.

Fold into potato mixture and sprinkle with almonds.

Bake until puffy and set, about 40 minutes
