Sweet Potato Puff

Serves 6 people

Ingredients

  • 4 sweet potatoes
  • 1/2 cup Orange marmalade or apricot
  • 1/2 cup OJ
  • 2 tsp almond extract
  • 3 egg whites
  • 2 tbsp almond slivers, toasted lightly

Directions

  1. Cook sweet potatoes until tender (15-20 min in micro or 1 hour in 450 oven or boiled 25 minutes)

  2. Let cool.

  3. eheat to 350.

  4. Peel sweet potatoes, mash.

  5. Add marmalade, sugar, OJ and almond extract; beat until smooth.

  6. Separate bowl, beat egg whites til stiff peaks.

  7. Fold into potato mixture and sprinkle with almonds.

  8. Bake until puffy and set, about 40 minutes
