Fruity Couscous Salad

Ingredients
- 4 cups couscous, cooked (1 1/3 cups dry)
- 2/3 cup slivered almonds
- 1/2 cup apricots, dried and chopped
- 2/3 cup craisins or raisins, micro with 1/3 cup water for 1-2 min to soften
- 1 tsp cumin
- 3 scallions, thinly sliced with green tops
- salt and pepper

Prepare couscous.

Combine all ingredients, serve at room temp or chilled.
