Fruit stuffed Pork Chops

Ingredients
- 1 apple, granny smith, peeled and chopped
- 1/2 cup prunes, chopped
- 6 pork loin chops (3/4 in thick- 4 oz each)
- 1 tsp oil
- 1 onion, finely chopped
- 1/4 cup apple juice
- salt and pepper
Directions

Combine apple and prunes, set aside.

Cut into side of each pork chops to form a pocket.

Stuff with apple mixture, secure with toothpick.

Heat skillet med-high heat.

Coat bottom with oil.

Cook chops 3 minutes, spray top of chop with oil, turn and cook 3 minutes or until browned.

Stir in onion, cook 1 minute, stirring occasionally.

Stir in remaining ingredients, reduce heat to low; cook covered 40 minutes.

Cook pan juices med-high 1-2 minutes and serve over chops.
