Fruit stuffed Pork Chops

Serves 6 people

Ingredients

  • 1 apple, granny smith, peeled and chopped
  • 1/2 cup prunes, chopped
  • 6 pork loin chops (3/4 in thick- 4 oz each)
  • 1 tsp oil
  • 1 onion, finely chopped
  • 1/4 cup apple juice
  • salt and pepper

Directions

  1. Combine apple and prunes, set aside.

  2. Cut into side of each pork chops to form a pocket.

  3. Stuff with apple mixture, secure with toothpick.

  4. Heat skillet med-high heat.

  5. Coat bottom with oil.

  6. Cook chops 3 minutes, spray top of chop with oil, turn and cook 3 minutes or until browned.

  7. Stir in onion, cook 1 minute, stirring occasionally.

  8. Stir in remaining ingredients, reduce heat to low; cook covered 40 minutes.

  9. Cook pan juices med-high 1-2 minutes and serve over chops.
