Double Chocolate Mousse Cake

Ingredients

  • 16 ounces semisweet chocolate chips
  • 2 cups margarine or butter
  • 1 cup sugar
  • 1 cup half and half
  • 1 tablespoon vanilla
  • 8 eggs

Directions

  1. Preheat oven to 350

  2. Grease 10” x 3” springform pan

  3. Over low heat, mix chocolate chips, butter, sugar, half and half, and vanilla until smooth

  4. Beat eggs slightly

  5. Beat chocolate mixture into eggs

  6. Pour into springform pan

  7. Bake 45 – 60 minutes or until toothpick inserted 2” from edge comes out clean. (Will still be Jello-like in center.)

  8. Cool on rack in oven with door open

  9. When cool remove sides of pan

  10. Wrap in plastic wrap and chill 6 hours

  11. Top with warm Chocolate Glaze
