Ingredients
- 1/4 C butter
- 1/3 C brown sugar
- 1 1/2 C Wheaties or other crunchy flake cereal
- 3 eggs, separate yolks and whites
- 1/2 C sugar
- 1 lemon
- 1 C whipping cream
Directions

Cook together butter and brown sugar on medium heat until the hard crack stage, stirring constantly

Take off heat and add to Wheaties

Stir and crumble; set aside

Squeeze the juice from the lemon, and grate off the very top layer of the rind, being careful not to grate too deeply; set aside

In a medium bowl, beat the egg whites into a medium stiff foam

Beat in sugar and egg yolks

In a small bowl beat the whipped cream until just before it stiffens (it should still pour easily)

Add lemon juice, grated rind, and whipping cream to the sugar and egg mixture, and stir until well mixed

Put 1/2 of the crumble in 8×8 dish

Pour lemon mixture into the dish and top with remaining crumble

Freeze until set
