Veggie Orzo Pasta

Serves 2 people

Ingredients

  • 1 teaspoon olive oil
  • 1 large onion, chopped
  • 1 zucchini, sliced
  • 1/2 cup orzo pasta
  • 1 cup vegetable stock or water (boiling)
  • 2 tomatoes, cubed
  • 2 tblsp fresh bazil, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper

Directions

  1. Heat oil over medium high heat.

  2. Add onion and zucchinni and sauté 5 minutes.

  3. Add orzo pasta, toss to toast lightly.

  4. Add stock, tomatoes, basil, salt, and red pepper.

  5. Cover and let simmer 10 minutes, or until the liquid has been absorbed, and the pasta is al dente.

  6. Serve with salad.
