Sweet Potato Peanut Soup

Ingredients

  • 1 onion, chopped
  • 2 garlic cloves
  • 2 tsp ginger root, minced
  • 1 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • pinch of cloves
  • 3 cups tomatoes, fresh or canned
  • 1 1/2 lbs sweet potatoes, peeled and chopped
  • 4 1/2 cups water
  • 1 carrot, peeled and chopped
  • 1/2 tsp salt
  • 1/8 tsp cayenne
  • 6 tbsp peanut butter
  • 1 bunch fresh cilantro, leaved only
  • red pepper flakes to taste

Directions

  1. Heat stockpot over med heat.

  2. Coat with cooking spray and add onion, garlic, and ginger. Stir constantly and cook for 5 minutes.

  3. Add cumin, cinnamon and cloves; cook for 2 more minutes, stirring constantly.

  4. Add tomatoes, sweet potatoes and water. Bring to a boil. Reduce heat to low and simmer 20 minutes.

  5. Add carrot, salt, cayenne and peanut butter and cook 5 minutes

  6. Puree in a blender until smooth.

  7. Garnish with cilantro and red pepper
