Spinach and bacon salad

Ingredients

  • 4 cups spinach, washed
  • 8 eggs, hard boiled, chopped
  • 6 slices bacon, cut in half lengthwise and 1/2 in sliced
  • 1 tbsp red wine vinegar
  • 1 1/2 tsp olive oil
  • pepper

Directions

  1. Heat skillet over medium heat.

  2. Combine spinach and hard-boiled egg in a large bowl.

  3. Cook bacon in skillet for 5 minutes, stirring regularly. Add the onion, vinegar and oil, cook 1 minute.

  4. Add bacon, onion mixture, dressing and pepper to spinach. Gently toss and serve.
