Quinoa and Grapefruit

Ingredients
- 3/4 cup quinoa, rinsed
- 1 grapefruit, sectioned
- 2 tbsp green onions, scallions
- 1 tbsp olive oil
- 1/2 cup fresh herbs (italian parsley, mint or a mix)
- salt and pepper
- red wine vinaigrette
Directions

Place quinoa in med pot and cover with water. Bring to a boil and cook until quinoa starts to get translucent around the edge, about 5 minutes. Drain.

Combine quinoa, grapefruit, onions, oil, herbs, salt and pepper.

Add dressing, toss and serve.
