Quinoa and Grapefruit

Ingredients

  • 3/4 cup quinoa, rinsed
  • 1 grapefruit, sectioned
  • 2 tbsp green onions, scallions
  • 1 tbsp olive oil
  • 1/2 cup fresh herbs (italian parsley, mint or a mix)
  • salt and pepper
  • red wine vinaigrette

Directions

  1. Place quinoa in med pot and cover with water. Bring to a boil and cook until quinoa starts to get translucent around the edge, about 5 minutes. Drain.

  2. Combine quinoa, grapefruit, onions, oil, herbs, salt and pepper.

  3. Add dressing, toss and serve.
