- 1 cup mayonnaise
- 1/3 cup mango chutney, chopped
- 1/4 cup fresh lime juice
- 2 teaspoons grated lime zest
- 1/2-1 teaspoon curry powder
- 1/2 teaspoon salt, to taste
- 4 cups diced cooked chicken breasts
- 1/2 cup fresh pineapple chunk
- 1/2 cup thinly sliced green onion
- 1/4 cup dried cranberries
- butter lettuce leaf, for lining plates
- 1/2 cup slivered almond, toasted

In a bowl, combine the mayo, chutney, lime juice, lime zest, curry powder, and salt.

In the same bowl, mix the chicken, pineapple, onions, and cranberries with the dressing.

Divide mixture evenly among 6 lettuce-lined plates and sprinkle with almonds.
