Confetti Couscous

Ingredients
- Couscous:
- 1 tsp olive oil
- 1/4 cup yellow onion
- 1 1/2 cup chicken broth
- 1 cup whole wheat couscous, dry
- Dressing:
- 1 tbsp OJ
- 1 1/2 tsp lemon juice
- 1 1/2 tsp Dijon Mustard
- 2 tbsp olive oil
- Confetti salad:
- 1/2 cup dried berries
- 1 tbsp pistachios, chopped
- 1 tbsp basil
- 1 tbsp mint
- 1 tbsp grated orange peel
- salt and pepper
Directions

in 1-qt saucepan, heat 1 tsp olive oil over med-high heat.

Add onion and cook for 3 minutes, add broth and bring to a boil, add couscous, stir , cover and remove from heat.

Let stand covered 5 minutes, transfer to mixing bowl

In a small bowl, whisk OJ, lemon juice and mustard, add 2 tbsp oil

Add everything together, mix well
