Sweet Potato or Pumpkin Waffles

Ingredients
- 1/3 cup sweet potato, cooked, peeled and pureed or 1/4 cup pumpkin puree
- 3/4 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1/4 cup cornmeal
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/8 tsp cinnamon
- 1/8 tsp ginger
- 1 cup milk
- 2 tbsp olive oil
- 1 egg white
- Blueberry syrup:
- 1 1/2 cups blueberries
- 2 tbsp water (if using fresh berries)
- 1 tbsp lemon juice
- 1 tbsp honey
- 3 tbsp light molasses
- pinch of cloves

For syrup, combine ingredients in saucepan, bring to boil over med-high heat, then reduce to low, cover and simmer until bettires burst and juices are slightly thickened (about 5 minutes)

Set aside and keep warm

Add flour ingredients, and other separate and then stir until just combined.

on high beat the egg white until stiff peaks form, gently whisk 1/3 of egg white into batter, then using rubber spatula fold rest of egg white into the batter.

Spoon onto waffle iron
