Chicken salad dijon with grapes and apple

Ingredients

  • 1 lb chicken breasts
  • 3 tsp olive oil
  • 3 tbsp plain yogurt
  • 3 tbsp Dijon mustard
  • 1/3 cup celery, chopped
  • 1/3 cup grapes, cut in half
  • 1/3 cup red apple

Directions

  1. rub chicken with 1 tsp oil and salt and pepper. Grill/cook for 3-5 minutes per side, then cut into bite-sized cubes

  2. Whisk together 2 tsp oil, yogurt, and mustard. add the chicken, celery, grapes and apple.

  3. Gently toss well to combine, season with salt and pepper
