Buffalo Chicken-blue cheese meat loaf

Ingredients

  • olive oil
  • 2/3 cup old-fashioned oats
  • 1/2 cup milk
  • 2 1/2 tbsp buffalo wing sauce
  • 1 lb ground chicken breast
  • 1/2 cup celery, finely chopped
  • 1/4 cup carrot, shredded
  • 1/4 cup onion, sweet, finely chopped
  • 2 egg whites, lightly beaten
  • 1/4 tsp salt
  • 2 oz blue cheese, crumbled, reduced fat (about 1/2 cup)

Directions

  1. Preheat over to 350, grease loaf pan lightly

  2. combine oats and mild in med bowl and stir to mix, let stand 3 minutes or until oats soften.

  3. Stir in wing sauce, add chicken, celery, carrot, onion, egg whites salt. Mix well, then add the blue cheese and gently mix to combine

  4. Transfer to prepared pan and bake for 35-40 minutes or until chicken is cooked through.
