Oven Chicken Cordon Bleu

Ingredients

  • 4 boneless skinless chicken breasts halves
  • 2 tsp dijon mustard
  • 4 tsp chopped fresh chives
  • 4 thin slices cooked ham
  • 4 slices swiss cheese
  • 1 egg white
  • 1 tsp water
  • 1/3 cup corn flake crumbs
  • 1/4 tsp paprika

Directions

  1. heat oven to 375

  2. spray 8 inch square (2 qt) baking dish with non-stick cooking spray

  3. place one chicken breast half between two pieces of plastic wrap or wax paper.

  4. Working from center, gently pound chicken with flat side of meat mallet until 1/4 inch thick.

  5. Repeat with remaining chicken breasts

  6. spread each chicken half with 1/2 tsp mustard

  7. sprinkle each with 1 tsp chives

  8. cut ham and cheese slices to fit

  9. top each breast with ham and cheese slices and roll, tucking the ends up.

  10. in shallow bowl combine egg white and water, beat slightly

  11. place corn flake crumbs in shallow dish

  12. coat chicken rolls with egg whites mixture and rollin crumbs

  13. place in dish and sprinkle with paprika

  14. bake at 365 for 25 to 30 minutes
