Smoked Sausage Gumbo

Ingredients

  • 2 celery ribs, chopped
  • 1 med onion, chopped
  • 1 med green pepper, chopped
  • 1 med carrot, chopped
  • 3 Tbsp olive oil
  • 1/4 cup AP flour
  • 1 cup chicken broth
  • 1 lb smoked kielbasa (or Andouille), cut into 1/2-inch pieces
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 1/8 tsp cayenne pepper
  • hot cooked rice

Directions

  1. In a large skillet, saute the celery, onion, green pepper and carrot in oil until tender. Stir in flour until blended; gradually add the broth. Bring to a boil. Cook and stir for 2 minutes or until thickened.

  2. Transfer to a 3 qt. slow cooker. Stir in the sausage, tomatoes, oregano, thyme and cayenne. Cover and cook on low for 4-5 hours or until vegetables are tender. Serve with rice.
