Pomodoro Sauce

Ingredients
- 1/4 cup olive oil
- 1 tablespoon finely chopped onion
- 1 tablespoon minced fresh flat-leaf parsley
- 2 cloves garlic, minced
- 2 (14-ounce) cans chopped tomatoes
- salt and freshly ground black pepper to taste
Directions

Heat the oil in a saucepan.

Sauté the onion, parsley, and garlic until the onion is soft. Stir in the tomatoes. Simmer until reduced by half.

Add salt and pepper. Gently mix the warm sauce with freshly cooked pasta.

The sauce can be stored in the refrigerator for 2 days.
