Greek-Style chicken with yogurt sauce

Ingredients
- 3/4 cup plain yogurt
- 1/3 cup cucumber, peeled, shredded
- 2 tsp lemon juice
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups lettuce, chopped
- 1 tomato, chopped
- 2 scallions, sliced
- 8 chicken tenders (about 3/4 lbs)
- 1 tsp oregano
- 2 tsp olive oil
- 2 cups brown rice, quick cooking

Combine yogurt, cucumber, lemon juice, half of garlic, 1/4 tsp salt, 1/4 tsp pepper in small bowl; set aside. toss together lettuce, tomato and scallions in med bowl;set aside.

Toss together the chicken, remaining garlic, oregano and remaining salt and pepper in med bowl.

Heat oil in large skillet over med-high heat. Add chicken and cook until browned and cooked through, about 2 minutes on each side.

Place 1/2 cup rice on each 4 plates, top with 1/4 of lettuce mixture, 2 chicken, and 1/4 cup of the yogurt sauce.
