VEGGIE-Sauteed Spinach

Ingredients

  • 3 slices bacon, roughly chopped
  • 3 garlic cloves, sliced
  • 2 bunches spinach, well washed and tough stems discarded
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper

Directions

  1. Heat a medium skillet over medium high heat. Add the chopped bacon and render until almost crisp.

  2. Add garlic and cook until fragrant.

  3. Add the spinach a little at a time.

  4. Toss with tongs until wilted.

  5. Add balsamic vinegar.

  6. Season with salt and pepper
