Great Balls of Fire Meatballs

Ingredients

  • 4 lbs. 80% Lean Ground Beef
  • 4 tsp. salt
  • 1/2 tsp. chili flakes
  • 1 tsp. ground fennel seeds
  • 1 cup bread crumbs
  • 1/2 cup chopped parsley
  • 2 Tbs. chopped oregano
  • 2 cups fresh ricotta cheese
  • 4 eggs
  • 4 Tbs. olive oil

Directions

  1. Preheat oven to 450F

  2. Combine all ingredients except the olive oil in a large bowl and mix thoroughly by hand

  3. Drizzle the olive oil onto two large baking dishes (9″×12″), evenly coating the surfaces

  4. Roll the mixture into firm, golf-ball sized meatballs

  5. Place the balls in the dish such that they’re lined up evenly in rows and are touching each of their four neighbors in a grid

  6. Roast until firm and cooked through, about 20 minutes.
