May the Sauce Be With You

Ingredients

  • 2 large yellow onions, small dice
  • 2 lbs. ground pork shoulder
  • 4 Tbs. olive oil
  • 4 tsp. chili flakes
  • 4 tsp. salt
  • 4 Tbs. tomato paste
  • 4 28 oz. canned chopped tomatoes

Directions

  1. Cook onions and pork with the olive oil, chili and salt over medium heat in a large pot (six quarts), stirring consistently till meat is thoroughly cooked and onions are soft and beginning to brown, about 15 minutes

  2. Add the tomato paste and continue cooking for 5 minutes.

  3. Add the canned tomatoes and stir consistently until the sauce begins to boil

  4. Continue cooking for 35 minutes, stirring every four or five so the sauce doesn’t burn.
