Carol’s beefy mac

Ingredients

  • 1 can italian stewed tomatoes (ground in blender)
  • 1 can mexican stewed tomatoes (ground in blender)
  • 1 can dark red kidney beans, drained
  • 1 cup of frozen corn
  • 3/4 pound ground beef
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1-2 garlic cloves, minced
  • 1 lb. box of macaroni noodles
  • 1 cup shredded mild cheddar cheese
  • garlic salt, to taste
  • chili powder, to taste
  • water, if needed for thinning

Directions

  1. brown meat, onion and pepper in skillet

  2. add tomatoes, beans and garlic salt, chili powder and corn.

  3. cook about ten minutes, until corn is cooked.

  4. Add water if needed to thin the mixture

  5. Meanwhile, cook about 1/2 the box of macaroni noodles, al dente.

  6. layer sauce mixture and noodles in a 2 qt. casserole dish and top with cheese

  7. Bake in 350 degree oven for about 15 minutes and cheese is melted
