Ingredients
- 1 pound cut up raw chicken
- Olive oil for sautéing chicken
- 2 tablespoons minced garlic
- 2 tablespoons fresh grated Ginger
- Zest of one lime
- 1-2 finely chopped serrano chilies or a jalapeno
- 1 can coconut milk
- 1 green pepper, cubed
- 2 cups sugar snap peas
- 1/2 cup chopped cilantro
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- Jasmine Rice
Directions

Cook chicken with garlic, Ginger, lime, and chilies.

Add in the remaining ingredients (except the cilantro) and cook for an additional 15-20 minutes. Add in the cilantro the last 5 minutes. Serve over jasmine rice.
