Cape Henlopen Fish Chowder

Serves 4 people

Ingredients

  • 1 cup chopped onion
  • 4 tables. butter
  • 3 large potatoes, pared and cubed
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups water
  • 1 - 16 oz can evaporated milk (i use skim)
  • 1 large can corn with liquid
  • 1 pound flounder, haddock or cod, fresh or frozen, cubed
  • parsley

Directions

  1. Saute onion in butter, add potatoes, salt, pepper – cover simmer 15 minutes. Place fish on top of potatoes. cover again and simmer until fish flakes – about 15 minutes. Stir in corn and liquid and evaporated milk. Heat just to boiling. Sprinkle with parsley.
