The Kerrnel’s Salsa

Need a blender or food processor. Can easily cut all ingredients in half for a “personal” portion that will last one person a couple of days in the fridge.

Serves 15 people
Ingredients
- 2 large Roma tomatoes
- 2 Jalapenos
- 1 large Sweet Onion (Vidalia)
- 1/3c fresh Cilantro
- 4 cloves Garlic
- 2 14.5oz cans Diced Tomatoes (in sauce)
- 2 tbsp Red Wine Vinegar
- 1 tbsp Cumin
- 1/4 tsp Salt
- 1/2 tsp Cayenne
Directions

Rough chop all vegetables and cilantro, add to blender.

Finely chop garlic, or use a garlic press if preferred. Add to blender.

Add canned tomatoes to blender. Add vinegar and spices.

Cover blender and pulse to a rough puree.

Taste and adjust seasoning as desired.
