Breakfast Beans

This recipe calls for black beans but you can use pinto, red or white. For a hearty breakfast, top with eggs, and serve with a roasted tomato, sweet potato fries and bacon.
Ingredients
- 1 Tbsp olive oil
- 1 clove garlic or shallot, minced
- 1 onion, chopped
- 1/2 tsp cumin
- 1/2 tsp dried oregano
- pinch cayenne pepper
- 1/2 tsp salt, to taste
- 1 jalapeno, seeded and minced
- 2 cups cooked black beans or 1 (15 oz) can, drained and rinsed
- 1 to 3 Tbsp water
- lime wedges, for garnish
- chopped cilantro or parsley, for garnish
Directions

Heat oil in a large skillet over medium high heat. Add garlic and onion and saute until softened, about 3 minutes.

Add spices and jalapeno and continue to cook for an additional 3 minutes.

Add beans and water, 1 Tbsp at a time, stirring until mixture is desired consistency. Let simmer for 5 minutes until beans are thoroughly heated. Taste and adjust seasoning.

Serve hot with a squeeze of fresh lime juice and chopped cilantro.
